brewing your own wine? when do you add the brandy when making port wine?
i’m buying the port wine kit. i know that port has brandy in it but the kit doesn’t have anything about it. i’m just wondering when do i add the brandy to the brewing process? and what kind of brandy should i add?
Between fermentation and aging. When a wine is fortified, the brandy kills off all the remaining yeasts, bringing fermentation to an immediate halt. Therefore, the later the brandy is added, the drier the result.
